Faroese cuisine is steeped in tradition, with fermented fish, cured meats, and even rhubarb taking centre stage. The Faroe Islands also boasts a thriving fine dining scene. Local chef Poul Andrias Ziska, formerly head chef of the two-Michelin-starred KOKS, has returned home to open his own restaurant in a humble Faroese hotel — and once again achieved the coveted two-star status. Michelin-recommended gems like ROKS, specialising in exceptional seafood, and Ræst, offering inventive takes on traditional Faroese fare, further showcase the islands’ culinary creativity.
